...from Erich's cookbook. _Thai Cooking with Kalmomal_ OK, here's the recipe for the curry puffs. I'm giving the recipe straight from the book. It claims to make 54 of them, but it probably makes twice that. Ingredients: 1/2 pound potato 1/4 cup vegetable oil 1/2 pound ground chicken 1 cup finely chopped yellow onion 1 tsp curry powder 4+1/2 tsp fish sauce 4+1/2 tsp granulated sugar 1/8 tsp ground white pepper won ton wrappers oil for deep frying 1. Boil potato in enough water to cover it until you can pierce easily with a fork (~30 min). Drain, let cool, then peel and cut into 1/8 inch dice. 2. Heat wok and add 1/4 cup oil. Fry chicken until no longer pink, then add onion, curry powder, fish sauce, sugar, and pepper. Fry about 2 mins, until mixture is dry, onion translucent, and chicken is light golden. Put mixture in bowl, add potato, mix thoroughly, and allow to cool to room temperature. The chicken shouldn't be lumpy. 3. Make won tons with wrappers and mix. 4. Fry won tons in 375-degree oil. Garlic sauce: Mix the following together and boil until reduced by half: 1/2 cup water, 1/2 cup white vinegar, 1/2 cup granulated sugar, 1 tsp ground chili paste (sambal oelek), 2 tsp finely chopped garlic, 1/2 tsp salt.
